Pin ItSteamed Tilapia and Black Bean Salad!
One of my favorite meals is a cold salad! Especially in summer. Today I made some delicious steamed Tilapia, and a staple summer salad Black Bean Salad. So I thought I would share how to make this easy meal!
Tilapia – Steamed
I buy individual quick frozen Tilapia Filets available in any grocery store. Make one filet per person you wish to serve.
Heat electric skillet (the type with a lid) to about 350F. Add enough water to cover the bottom, add frozen Tilapia… sprinkle fish with seasoning of choice. I use a sprinkle of lemon pepper, and a dash of Salmon Seasoning (Clubhouse).
Cook for 15 minutes or until it flakes easily with a fork.
Black Bean Salad – Serves 4-6
1 can drained Black Beans
1 can Niblets corn or 1.5 cups frozen kernel corn (thaw)
1 Red Pepper cut into bite size pieces
1 Jalapeno pepper – cut into small bits
1/2 cup chopped Cilantro
Mix these ingredients together, and then make dressing.
Dressing:
1/4C Olive oil (you can also use Grapeseed oil)
1/4C of limejuice
1 Tablespoon Cumin
Stir together all ingredients.Then mix and add to the salad and stir.
Refrigerate up to 24 hours prior to serving, but a minimum of 4 hours for best results.
